This is a portfolio site. It sells nothing, has no login and no contact form, so there is very little to collect. What follows is the whole of it.

Nothing you type. There is no contact form, no newsletter and no account on this site: the only way to reach me is by email or telephone, and what you send that way is simply correspondence.
If — and only if — you accept analytics cookies, Google Analytics records anonymous usage data: which pages are opened, for how long, roughly where in the world the visit comes from, and whether the visit is from a phone or a desktop. It does not tell me who you are.
Like every web server, the hosting provider keeps standard access logs (IP address, time, page requested, browser). These are generated automatically by the server and kept for security and troubleshooting.

No advertising, profiling or social media cookies are used. Nothing on this site follows you to other sites.
Until you accept, Google Analytics is not loaded at all — the script is never requested, so no analytics cookie is created. Declining leaves the site fully working; it simply goes uncounted.
Analytics cookies are used on the basis of your consent, which you give by clicking Accept and can withdraw at any time using the link at the bottom of this page. Server access logs rest on legitimate interest in keeping the site running and secure.
Google Analytics is operated by Google Ireland Limited, and data may be transferred outside the European Economic Area under the safeguards Google declares for its service. If that transfer concerns you, decline analytics — the site works identically either way.
Under the GDPR you may ask for access to your data, correction, erasure, restriction of processing, portability, and you may object to processing. You may also withdraw consent at any time without affecting what happened before.
Write to info@zolfostudio.com and I will answer. If you believe the matter has not been handled properly, you have the right to complain to the Garante per la protezione dei dati personali, the Italian supervisory authority.
